Watching all the EV videos, and then other Nurburgring videos (again :) ), I realized that EVs are too quiet to be fun to watch.
I also realized that a class that is much maligned is actually the best.

Yeah, watching the video, the car looks like a handful on the track. The Taycan may very well be the better car on the track - I'm just saying it's much more than just a new motor :)
This is the model that Tesla should follow for Plaid Plus or Plaid 2 or whatever, and Porsche for the J1.2...
The new car has better aerodynamics ("tuned"), a different suspension (unclear how much is completely new vs. tuned), different brakes and different wheels. It also has better battery cooling w/the same cells and chemistry (is that tuning?), and completely new motors.

I think it's good to watch these things carefully: pretty much every manufacturer, perhaps save Porsche, has been caught being, eh, creative with the rules on the Ring. I remember similar issues with the Lamborghini Aventador runs.

I'm pretty sure they would have had an issue with modified brakes, etc.
The turbo S only has higher HP than the Turbo for 2.5 seconds (IIRC). The big question is whether that regenerates during that 7+ min run if you are pushing the car so hard. The Turbo they used for the run had every single performance option added to it.
My money is on the Turbo S not having...

Beyond lap times and 0-60 bragging rights, I honestly would take the Plaid...
I think their powertrains aren't bad either.
They have very competitive performance (acceleration and repeatability) and efficiency (meaning good range and fast charging). The Plaid time on the Nurburgring IMHO showed that it's not just about 0-60.
